“Given the vineyard’s size,
we can take what we already do well
to even greater heights,
and essentially ensure the environment is front and centre of our daily thought process,
which is so important to us”.
The Clos
A house
in the midst
of the vines
Having served as little more than a shed for more than half a century, the presbytery was brought back to life in 2014.
What is immediately apparent is that Clos Saint-Martin is not only about cultivating vines, it is also a way of life.
It is here that Sophie goes to extraordinary lengths to serve the most delicious Bazadaise beef tournedos with duck foie gras, or sea lamprey bordelaise, both a heavenly match to a bottle of Clos Saint-Martin from whichever vintage takes her fancy.
Those lucky enough to have savoured the experience describe it as a privilege to have sampled Sophie’s unique take on ‘Chateau life’.
